Rich, luscious and spicy — this 100% rye whisky from Fielden was finished in a coastal Oloroso sherry cask, layering honeycomb and banana chips with waves of sea-salted caramel.. This is a 100% rye whisky finished for just over 2 years in a 45-year-old ex-Solera Oloroso Sherry cask from a bodega in Sanlúcar de Barrameda.. This is coastal sherry territory, where the Atlantic winds give the wine a signature minerality. That maritime character has transferred beautifully into the whisky, melding with the Oloroso toffee/nuttiness to create an insane amount of complexity and richness.. Nose: salted caramel, golden honeycomb and a hint of honeysuckle. Palate: a deepening saline-caramel sweetness, layered with vanilla ice cream and overripe apricot, before opening out into pecan pie richness. Banana chips bring a crisp, tropical chew; there’s also nostalgic notes of warm waffles with maple syrup. Finish: a playful fizz of cola cubes grounded by toasted walnuts, oak sawdust, and a flicker of smoked sea salt. Only 1109 bottles created.. Cask: New American Oak.
