Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Founded in the second half of the 19th century, Pio Cesare is a prestigious Piedmontese winery with approximately 70 hectares of vineyards spread across the Langhe hills. Pio Cesare's Barolo is a wine of great elegance and aging potential, produced with Nebbiolo grapes selected and harvested from a series of estate plots spread across Monforte, Serralunga d'Alba, Barolo, Grinzane Cavour, La Morra, Novello, and Castiglione Falletto. The combination of diverse clay, limestone, and marl soils ensures the production of a harmonious, multifaceted, and highly balanced wine. After traditional vinification with long maceration on the skins, the wine ages for three years in a mix of French and Slavonian oak barrels of varying sizes. In the glass, the wine reveals a bright and complex aromatic profile with notes of ripe red fruit, interspersed with hints of spice, graphite, and violet. With age, the typical tertiary aromas of licorice and undergrowth emerge. On the palate, it is concentrated, deep, and full. It has a well-balanced acidity and a lingering finish reminiscent of undergrowth. The diversity of its terroirs and partial aging in barrique make it approachable while retaining the more austere character typical of Nebbiolo. It can age well for a couple of decades, but can also be enjoyed now with roast pheasant or venison stew.
