Product Description

Domaine Guy & Yvan Dufouleur is a family-run Burgundy winery founded over 400 years ago in Nuits-Saint-Georges and run today by Yvan Dufouleur. The estate's vineyards span over approximately 28 hectares. The Pinot Noir grapes are sourced and harvested manually from a vineyard with an average age of 65 years in the Clos du Chapitre Monopole, north of the Cote de Nuits. Here, the vines, located at an altitude of 320 meters with eastern exposure, are rooted in clayey-limestone soils, deep and slightly marly. After the pre-fermentation cold maceration and the following vinification, the finished wine rests for 12 months in oak barrels, before blending and a further 3 months in stainless steel. Fixin Premier Cru Clos du Chapitre Monopole has a bright and deep color with dark ruby ​​tones and a complex and broad aromatic profile. On the nose it reveals a pleasant fruity intensity with notes of blackcurrant, blueberry, and blackberry and then wild and earthy hints, nuances of truffle and licorice. On the palate, it is powerful and characterful, round and elegant. It has firm but fine and well-integrated tannins and a good acidity. The finish is long and gently oaky. Pair it with game stew or goulash, polenta with porcini mushrooms, and mature cheeses.
