Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. A renowned Burgundy producer, Maison Louis Jadot was founded in Beaune in 1859 and today manages over 150 hectares of vineyards in the region, spread across various estates. Led by the Gagey family since the 1990s, the Mzison produces a wide range of wines from various appellations, including some prestigious crus, capable of beautifully evolving over time. The Pinot Noir grapes are sourced from a series of plots spread across the Côte Chalonnaise. After harvest, the grapes are transported to the Burgundy winery in Givry for vinification. After fermentation, the finished wine ages for 8-10 months in barrels and vats before bottling. In the glass, Couvent des Jacobins Bourgogne Rouge presents a full and vibrant ruby red color. Its aromatic profile is broad and fragrant, with delicious notes of red berries and ripe raspberry, followed by delicate hints of spice and undergrowth. On the palate, it is soft and fruity, elegant and fresh, with silky tannins and a youthful, vibrant character. The finish is long and delicately spiced. It is very versatile when paired with food, pairing well with grilled tuna steak, roasted salmon, guinea fowl, duck, and pigeon.
