Theo Dancer is a young French winemaker who, in 2020, took over the family business, founded by his father Vincent in 1996 in Chassagne-Montrachet. The estate extends across approximately 6 hectares of vineyards, converted to organic farming in 2012, and located in several prestigious Burgundy appellations such as Chassagne, Puligny, Meursault, Beaune, and Pommard. In addition to implementing family practices of low yields and natural winemaking, Theo has started a small negociant business and also acquired Domaine Roc Breïa, in the Mâconnais region. The Savagnin grapes, the most representative variety of the Jura region, come from vineyards planted on marly-limestone soils, which enhance their fresh and mineral character. Theo sources his grapes, selecting them from winemakers who work the vineyards with respectful practices. Vinification occurs spontaneously with indigenous yeasts. The result is an expressive wine that remains true to its character, with a bright, clear straw-yellow color and golden highlights. On the nose, the wine reveals a lively and fragrant aromatic profile with notes of lemon and grapefruit, followed by hints of green apple and wildflowers on a mineral and slightly spicy background. On the palate, it is energetic and crisp, elegant and taut, with a pronounced minerality and lively acidity. The finish is long and pleasantly thirst-quenching. Try it with freshwater fish or Comté cheese.
