After Don’s experience consulting in Priorat, Spain, the duo launched Tar & Roses in 2006 with the goal of showcasing Italian and Spanish varietals in the diverse terroirs of Central Victoria. Their 2021 Pinot Grigio reflects this vision — vibrant, expressive, and thoughtfully crafted with an emphasis on flavour and finesse.. TASTING NOTES. Sourced from three cool-climate vineyards, this wine offers elegant flavours of fresh peach, pear, and hints of tropical fruit. A brief period of skin contact imparts a delicate pink hue and a subtle spicy, textural edge. Bright, soft, and approachable, this is a Pinot Grigio with genuine complexity and charm — a far cry from the typical mass-market style.. FOOD PAIRING. Perfect with crispy calamari, grilled prawns, or nutty salads with goat cheese or tahini.
