Apostoles 30-Year-Old Palo Cortado Sherry Gonzalez Byass Half Bottle

Palo Cortado is a light wine chosen to be a Fino but instead aged oxidatively like an Oloroso whilst retaining some of the elegant Fino character. It is the rarest type of sherry and this example has had 30 years' ageing to gain even further complexity. Dark amber in colour, with intense nuttiness and caramel on the nose but a dry finish with a delicate yet mouth-filling warmth. To fully appreciate every nuance of this wine, you must try it by itself, but it will also pair with cheese, salted almonds and tapas. In 2022, this wine won an IWC award.
