Château Veyran AOP Saint-Chinian

A wonderful appellation in the Languedoc, Causses-et-Veyran consists of picturesque hillsides and pine forest. Since 1989, Olivier Mignard has been mastering his craft as an oenologist, with twenty years at Jaboulet and nineteen in Auvergne. Each step is guided by the lunar calendar, from harvest to tasting, showcasing Mignard’s lifelong devotion to vinicultural artistry. This practice ensures perfect ripeness and a long, slow maceration, enhancing the wine's finesse. The absence of wood in the ageing process preserves the natural freshness and variety of the wine. This wine is characterised by a bright, fresh bouquet of red fruits and delicate floral notes. On the palate, it is smooth with well-balanced tannins and a lingering, crisp finish. Perfect with grilled lamb, ratatouille, or aged cheeses.
