Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. Founded in the early 2000s, Domaine Charly Nicolle is located in the Chablis wine region, France. Charly comes from a long-established family of winemakers, and today he manages the estate, which extends across approximately 26 hectares of Chardonnay vineyards, together with his wife, Lucie Thieblemont. The Chardonnay grapes come from a 6-hectare vineyard located in the 1er Cru Les Forneaux, in the municipality of Fleys. Here, the vines, between 50 and 60 years old, are rooted in clay and limestone soils on the Kimmeridgian base typical of the Chablis wine region, which impart great minerality and purity to the wines. After harvesting and fermenting at a controlled temperature with indigenous yeasts, the finished wine ages on the lees in steel tanks and barrels (only 15% of it) for a year. The result is a full-bodied and well-balanced wine with a bright straw-yellow color and a fragrant aromatic profile revealing notes of citrus, apple, and pear, followed by floral hints, with a touch of almond and honey. On the palate, it is soft and rich, fresh and lively, with a balanced character and good versatility in food pairings. It goes well with veal, roast poultry, and foie gras escalope.
