COQ- QUINTA SAN DI EGO Didier Belondrade's interest in the significance and importance of olive oil in Spanish culture has led him to produce his own oil. The olive tree's excellent adaptation to the climate and terroir of La Seca has made it a prominent feature of the Quinta San Diego ecosystem. Different varieties are grown on its plots—from the well-known Manzanilla, Arbequina, Cornicabra, and Picual to lesser-known varieties such as Changlot Real, Arbosana, and Lechín—which together aim to preserve and highlight the great genetic heritage of Spanish olive trees. COQ is an extra virgin olive oil that comes exclusively from the organic olive trees of Quinta San Diego and is obtained by mechanical cold extraction. Tasting notes Appearance: Golden-green with bright green reflections. Aroma (nose): Medium to high fruitiness; green notes of freshly cut grass, olive leaf, green tomato; almond, nutty hints and subtle herbal undertones. Palate: Smooth entry, balanced mouthfeel; medium fruitiness; gentle bitterness and moderate pungency towards the end; persistent finish with a herbal and almond aftertaste. Balance: Harmonious combination of fruitiness, bitterness, and spiciness; medium complexity. Intensity: Medium to medium-high fruitiness; varietal expression without being overly aggressive. Suggested pairings: Salads, grilled vegetables, sourdough bread, mild fish, cheeses, legumes, soups; ideal as a finishing touch rather than for high-heat cooking.
