No need to decant but best to open it half an hour before service. 689 Cellars was founded in 2008 by friends Curtis McBride and Kent Rasmussen, who, after a career in the wine industry, decided to start their own business. The number 689 is the result of their knowledge of the East and draws on Chinese numerology (according to which these numbers are auspicious), and expresses their ideals of a perfect winery. Submission Pinot Noir is crafted with select grapes from vineyards located in California's finest winemaking regions, including Monterey, Sonoma, and Mendocino. After harvest and vinification, the finished wine is aged in French oak (20% of which is new) for 10 months before being bottled and released. In the glass, the wine reveals a clear, crystalline ruby color with brilliant highlights. Its aromatic profile is broad and expressive, with fragrant fruity notes of pomegranate and raspberry, cherry and blueberry, followed by hints of tarragon and lavender on a floral background. On the palate, it is lively and juicy. It is elegant and easy to drink, with delicate, supple tannins and a silky texture. It has a pleasant acidity that adds freshness and balances the taste, and a long finish that evokes spicy notes and ripe wild berries. It is the perfect wine for game birds: try it with pheasant, wild goose, or guinea fowl with herbs.
