75cl / 12% - Ernest Remy is a small producer crafting wines in the Grand Cru of Mailly-Champagne. The Oxymore is a blend of 60% Pinot Noir and 40% Chardonnay, aged for four years. The palate offers notes of buttery toast, dried fruits, toasted almonds, hazelnuts and honey that linger in the finish. Try pairing this Champagne with smoked fish, creamy chicken dishes or buttery puff pastry dishes.
