awa before dawn is a special sake – the still (base) sake before the secondary fermentation of our core product, Classic awa. This is a Junmai Muroka Nama Genshu style (unfiltered, unpasteurized, undiluted), with 50% Rice Koji – more than double the amount generally used in standard sake production. The flavour profile includes strawberry, lychee, and honeysuckle on the nose. On the palate, it is refreshing and light with a subtle acidity and a juicy mouthfeel, complemented by hints of tropical fruits. The gentle sweetness is balanced by a refreshing tartness reminiscent of tropical acidity, resulting in a smooth and juicy drinking experience with a light and vibrant profile. Serve well chilled (4-8 °C).
