Drink it now or cellar for up to 3 years. No need to decant. Domaine Charly Nicolle continues the long tradition and winemaking experience of the Nicolle family. Founded by Paul Nicolle in the 1950s, it was acquired by his grandson Charly, who gave it his name in the early 2000s. Today, the estate, situated in the small village of Fleys, encompasses approximately 26 hectares of vineyards and produces exceptional Chablis wines. Cremant de Bourgogne Brut Nature is a sparkling Blanc de Noirs wine made from Pinot Noir grapes with no added sugar. The grapes come from a small vineyard in Molosmes, on the border with the Champagne region, on stony, calcareous soils. After harvesting and gentle pressing, fermentation takes place in stainless steel at a controlled temperature, and the wine rests on the lees for two years before disgorgement. In the glass, the wine reveals a clear, intense yellow color, shimmering with a very fine perlage. Its aromatic profile opens with fragrant notes of peony and red berries, followed by hints of stone fruit and custard. On the palate, it is round, creamy, and structured, with a lively character and a long, clean finish. It's a great choice for brunch and works very well with deep-fried appetizers and shrimp tempura.
