Tar & Roses was founded by Don Lewis and Narelle King, combining decades of winemaking experience in Heathcote and influences from Spain and Italy. Their aim: to showcase how classic European varietals like Shiraz thrive in the diverse soils of Central Victoria. The 2018 Shiraz reflects this philosophy with bold fruit, savoury spice, and balanced structure — a modern Australian red with Old World finesse.. TASTING NOTES. Lifted aromas of ripe blackberries, red berries, liquorice, and warm earth, with hints of spice. The palate is juicy and vibrant, offering flavours of rhubarb and mulberry, supported by fine, grainy tannins and a clean, persistent finish. A versatile and elegant expression of Central Victorian Shiraz.. FOOD PAIRING. A superb match for slow-braised beef barbacoa tacos or Greek lamb shank (Kleftiko).
