Drink it now or cellar for up to 10 years. No need to decant but best to open it half an hour before service. Domaine Chevalier is one of the most renowned wineries in the Côte de Beaune in Burgundy. The estate owns around 15 hectares of vineyards managed by Claude Chevalier, who, in 1994, took over the property created by his great-grandfather Emile in 1850. Today, Claude is supported by his 3 daughters, who help him both in the vineyard and in the administrative work of the winery. The Pinot Noir grapes come from the prestigious Burgundian appellation of Ladoix where the soils have a limestone consistency covered with calcareous flint debris that give the wines a good structure and an attractive and fragrant character. The Ladoix Rouge from Domaine Chevalier has a bright ruby ​​color and a broad aromatic profile with fruity notes of cherries and currants and gentle hints of sweet spices in the background. On the palate, it has a medium body and smooth and well-integrated tannins. It is soft and harmonious with a good fruit concentration and a long and elegant finish. It is ready to drink now but shows a clear potential to age well for a few years. It pairs well with duck and goose, or coq au vin.
