ABOUT THE WINE. From the slopes where the Hautes-Côtes meet the Côte de Beaune, Pernand-Vergelesses is a sweet spot for mineral, finely etched Chardonnay. Pierre Mayeul’s 2022 is hand-harvested and whole-bunch pressed, then fermented in French oak (~30% new) and aged 16 months on fine lees with minimal bâtonnage. Bottled lightly filtered (no fining), it captures the appellation’s chalky precision with the vintage’s ripe, sun-lit fruit. 100% Chardonnay • 13.5% ABV.. TASTING NOTES. Clear gold in the glass. A crystalline, chalk-laced bouquet of white flowers, pear and citrus with a delicate toasted nuance. The palate is silky and precise—ripe orchard fruit carried by bright acidity and a saline, long finish. Pure, poised and wonderfully drinkable now, with the structure to evolve.. FOOD PAIRING. Brilliant with pan-fried scallops, pikeperch in beurre blanc, or free-range poultry in cream sauce. Also superb with creamy, soft cheeses—Brillat-Savarin, Saint-Félicien—and alpine tomme..
