Tyrrell's Vat 1 Semillon 2018

Cellar for 15 years or more. No need to decant before serving. Tyrell’s Vat 1 Semillon is alive with sharp notes of pure lime, lemongrass, fresh straw and wax. It is one of Tyrell’s finest white wines and a benchmark for Semillon from South East Australia. The fruits were sourced from the Tyrell family’s oldest vineyards, planted on sandy, free-draining soils as far back as 1923. Tyrell’s winery is a mainstay of the Hunter Valley region, and the family have been part of the landscape since the early days of Australian wine-making, in the mid-19th century. The winery has received over 5,000 trophies since 1971 and is currently under the leadership of 5th generation Tyrell wine-makers, Chris, Jane and John. Vat 1’s palate is laden with notes of lime rind, apple, pear and lemon. No oak was involved in its creation, allowing the pure fruit flavours to create an indelible drinking experience. It is precise and crunchy in the mouth, with soft acids and a slightly honeyed texture, typical of Semillon. Elements of yeast and toasted bread will reveal themselves as the wine ages in the bottle. The finish is long, with a subtle minerality that clings to the tongue. Consider keeping it in the cellar for some time, and pairing it with grilled chicken, aged cheese or an elegant fish dish.
