Enjoy it now, or cellar for a few more years. No need to decant before serving. Posh is a taste of Croatia, fashioned from the native white grape Pošip, which was first discovered clambering up the side of a pomegranate bush. It is a gorgeous golden colour in the glass, alive with scents of peach, almond, dried herbs and citrus rind. The fruits were sourced from Čara, on the Adriatic island of Korčula. Saints Hills is a family project, founded by husband and wife duo Ernest and Ivana Tolj, self-taught wine-makers and natives of the Dalmatian Coast. They are also supported by the legend of Bordeaux himself, Michel Rolland, who fills the roles of consultant and oenologist. However, the less you know about Saints Hills the better. As Ivana Tolj herself puts it “People need to know nothing about the winery. The impression is in the bottle”. Posh is a medium-bodied wine, with vivacious acidity. Before bottling, the wine spent an entire year maturing in egg-shaped concrete casks. Lemon zest, yellow apple, a medley of stone fruits, vanilla and salinity all come through on the palate. This is followed by a long, dry finish. It’s a superb representation of the Croatian coast, perfect for pairing with any kind of white fish or vegetarian risotto and pasta dishes.
