Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Present in Beaune, Burgundy since 1816, Maison Jaffelin now belongs to the Boisset wine group, while maintaining full purchasing independence. It has been led by Marinette Garnier since 2011. The Pinot Noir grapes come from a small, monopole plot in the upper part of the Premier Cru Sur les Greves, atop the slope of the Beaune mountain. Here, the old vines, which produce low yields, are rooted in shallow, calcareous soils and benefit from an eastern exposure. The plot's name pays homage to the mother of the Virgin Mary (considered the mother of humanity), because in the early 20th century, it belonged to a community of nuns who cared for the orphans of Beaune. After manual harvesting and vinification with a three-week maceration, the finished wine ages for approximately 18 months in French oak, approximately half of which is new. In the glass, the wine reveals a clear and transparent color with ruby hues. Its aromatic profile is fresh and fragrant with delicious fruity notes of strawberries and small red berries, followed by a delicate oak note. On the palate, it is smooth, succulent, and elegant, with a refreshing, juicy character and a long finish with light savory touches. It pairs perfectly with game birds and grilled pork.
