Their sakes are hand-crafted in small batches by the Yonezawa family. They use only the finest local ingredients including Yamadanishiki rice, celebrated as the noblest rice for sake, and pure spring water from the Akashi region. Brewing is carried out by hand and in small vats, just as it has been for decades, with every stage of the process carefully overseen.
