This is our finest grade of caviar As a first course, we suggest 30-50g per person Our Caviar Number 3 is produced by crossing a baerii or Siberian sturgeon with the larger huso or beluga sturgeon. Like Numbers 1 and 2, it's from our longstanding Italian suppliers. It's a valuable hybrid that's almost as good as beluga. This caviar is a wonderfully decadent way to elevate your canapes. Or just spoon it down. 50g would give you two decent servings or would still be meaningful spread across 15 handsome canapes. Here's a note about borax in caviar . Sustainability - our rating 9/10 Sturgeon are on the endangered species list in the wild. This is why we only deal with farmed sturgeon. Farming sturgeon is helping to re-populate rivers and preserve the species. The impact on habitat is minimal.
