ABOUT THE PRODUCER. Pierre Mayeul is the project of three long-time friends with deep Burgundian roots, crafting small-lot wines that spotlight each terroir and climat. Vinified in an historic Ladoix castle and raised in 17th-century Beaune cellars, the wines marry precision with classic élevage. In 2022—a sunny, generous Burgundy vintage—the grapes were gently pressed in a bladder press, the juice settled for 24 hours, then fermented and aged 15 months in French oak (≈30% new) with regular lees-stirring to build texture and complexity.. TASTING NOTES. The 2022 shows ripe yet focused fruit: pear, white peach and baked apple layered with toasted hazelnut, acacia honey and vanilla bean. The palate is silky and layered, with notes of savory cream, wild mushroom and a touch of crushed chalk. Bright acidity and a discreet oak frame lead to a long, saline finish with a hint of toasted pumpkin seed.. FOOD PAIRING. Superb with linguine carbonara, mushroom risotto with truffle, roast poultry in cream, or butternut squash soup finished with crème fraîche and toasted seeds.. FRIARWOOD SAYS.
