This smooth junmai ginjo sake, slowly brewed at low temperatures, is made with Ginotome rice from Iwate prefecture combined with a blend of yeasts. The distinct aroma of melon and strawberries becomes an even fresher and fruitier taste upon first sip. It has juicy strawberry, melon, pineapple, sage, and creme fraiche characters with light and refreshing dryness on the palate and a leafy finish. It pairs well with fresh tofu salad with myoga, grilled aubergine marinated in ginger and soy sauce, Xiao Long Bao, and gazpacho. Serve well chilled (4-8 °C). Store in a dry and cool place, avoiding direct sunlight.
