ABOUT THE WINE. Nestled in the rolling hills of Maremma, Tuscany, Conti di San Bonifacio was founded in 2002 by Manfredo and Sarah di San Bonifacio, who transformed the estate into a luxury wine resort and working vineyard. With just 7 hectares under vine and consulting by Luca d’Attoma, the estate crafts small-batch wines that marry local terroir with international polish. Docet 2015 is a refined, structured Super Tuscan—Cabernet Franc for aromatic lift, Cabernet Sauvignon for backbone—aged in 50% new French oak for definition and silk. The 2015 vintage in Tuscany was outstanding, bringing ripe, perfectly balanced fruit with natural freshness.. TASTING NOTES. Ripe black cherry, cassis and wild raspberry glide into violet, cedar and graphite, with a whisper of Mediterranean herbs. The palate is opulent yet poised—layers of red-black fruit over fine, polished tannins and a subtle mineral lift. Oak is beautifully integrated, adding cocoa and spice without masking fruit purity. Long, harmonious finish. Decant 60–90 minutes.. FOOD PAIRING. Perfect with grilled or roasted lamb, game dishes, Tuscan stews, or pappardelle al cinghiale.
