Also named 'the vegetarian's oyster' and often seen being used by TV chefs, this plant will amaze you with its similarity to the eponymous shellfish! The Oyster Leaf Plant can be found growing around isolated coastal areas of the UK and is commonly known as Sea Bluebells due to it's eye-catching, edible blue blooms. Plants create spreading mats of fleshy, blue-green foliage which will happily grow in poor, tricky soils and is perfect for coastal gardens and rockeries. The subtle earthy, salty taste works wonderfully with seafood but also adds a unique salty element with an umami flavour. Try wilting in butter to serve on toast, add to salads or serve with sushi. Height: 20-30cm (8-12in). Spread: 30-40cm (12-16in).
