Snoek AKA Barracuda case

12kg case of Butterflied Snoek / Barracuda   Snoek is an icon of South African cuisine but unknown here to anyone under the age of 90 (it's a long story). Some South African emigres asked us to try to import it and six months later, here it is.  Apparently you Saffas don't go in for namby fillet steaks. You want all the meat in a single piece. So that's what we're giving you here. The main bone has been removed and so that we can pack it efficiently, we cut it in two. But you can just park the two halves together on your braai and it will be like old times.  And just to confirm what you already know: snoek is no stranger to worms. You'll find a few in most packs - they'll be fine once cooked.
