Welcome to Yorkshire
News • July 30th, 2025
|Picture this. It’s a warm day in August, and someone offers you a Sunday roast. But it’s not on a plate. It’s in a bowl of ramen, and there’s a proper Yorkshire pudding on the side for dipping. Sounds a bit bonkers, right? Well, a Japanese restaurant in Leeds has done just that.
Maki & Ramen on Bond Street is celebrating Yorkshire Day in the most creative way possible, by launching a special menu that smashes together classic Yorkshire grub with traditional Japanese dishes. And it’s not just a gimmick. This is a full-on culinary adventure available from the 1st to the 31st of August, created to make the people of Yorkshire feel seriously proud. It's a whole new take on local food.

So, what’s actually on this menu?
Let’s get straight to the good stuff. This limited-edition menu is a wild ride of flavours, taking things everyone in Yorkshire knows and loves and giving them a Japanese twist. It’s the kind of food fusion that makes you stop and think, “Why has nobody done this before?” Here’s a look at what’s up for grabs:
- Iced Yorkshire Tea Matcha: Forget your usual brew. This is the ultimate mash-up for tea lovers. It takes the county’s favourite cuppa, Yorkshire Tea, and blends it with Japanese matcha. Matcha is a fine powder made from special green tea leaves. The result is a super refreshing drink, perfect for a summer’s day. It even comes with a Yorkshire Rose stencilled on top. It’s a unique drink that screams Yorkshire pride.
- Sunday Roast Ramen: This could be the star of the show. It’s a whole Sunday roast in a bowl. Imagine tender sous vide chicken (that’s a fancy way of cooking it slowly in water to make it extra juicy), roast potatoes, and a rich chicken gravy broth, all served up like a classic Japanese ramen. And yes, they remembered The Yorkshire pudding for dipping. A proper roast dinner, reinvented.
- Ee By Cod: A playful nod to a chippy tea. This dish takes cod, wraps it in crispy rice noodles, and deep-fries it until it's golden. It’s served with a tangy vinegar mayo and a side of mushy edamame, which are young soybeans. A clever twist on a seaside classic.
- Yorkshire Three Peaks: Not a mountain challenge, but a plate of three amazing things. It starts with a Japanese take on a meat and tatie pie, served with Chinese cabbage skin and a carrot purée. Alongside that, there’s a unique blueberry onigiri (a savoury Japanese rice ball), and a dessert of yuzu custard with ginger and Parkin crumbs. Yuzu is a Japanese citrus fruit that’s a bit like a lemon crossed with a grapefruit. What a trio of flavours.
- Sushi Butty: A butty, but not as you know it. This is a crispy beef sushi sandwich. Yes, you read that right. And because this is a proper Yorkshire Day celebration, it comes with a rich Wensleydale cheese sauce and a dip made from Henderson’s Relish. An absolutely iconic Yorkshire condiment.
- Builder’s Crème Brew-lay: To finish it all off, a classic dessert gets a Yorkshire makeover. It’s a crème brûlée, but the custard is marbled with flavours of Yorkshire Tea and Parkin matcha. A rich, sweet end to an epic feast. This is food that tells a story.
The chef with the vision
So who is the brain behind this brilliant madness? Meet Sophie Wang, the Executive Chef at Maki & Ramen. She’s the one who dreamt up this incredible fusion menu. With over four years at the restaurant, she’s been guided by the company’s founder, Teddy Lee, who believes that sushi is more than just food; it’s art. It’s clear Sophie shares that passion. She’s taken the comforting, hearty flavours of Yorkshire and blended them with the fresh, delicate tastes of Japanese cooking.
It’s a bold move, but one that shows a real love for the city of Leeds and its food history. Sophie, the Executive Chef, had this to say: “We’re absolutely thrilled to bring our completely unique Yorkshire Day menu to Leeds. This fusion is all about celebrating the best of both worlds - combining the comforting, hearty flavours of Yorkshire with the delicate, fresh tastes of Japanese cuisine. It’s our way of paying tribute to this incredible city and its rich food heritage, while offering something exciting and new for locals and visitors alike. We hope every dish makes people feel proud, inspired, and a little bit adventurous!”
More than just a restaurant
Maki & Ramen might be relatively new to Leeds, having opened in December 2023, but they’ve been making waves since starting in Edinburgh back in 2015. They’ve picked up awards for being the ‘Best Japanese Restaurant in Scotland’ two years running and have been recognised as one of the fastest-growing businesses in the UK. But it’s their connection to the community that really stands out. They don’t just serve food; they get involved.
In every city they’re in, they partner with a local charity, donating a portion of their profits to help those closest to them. In Leeds, they sponsor the Leeds Hugh O’Neills GAA team, helping to support local sport. The restaurant's founder, Teddy Lee, even goes into schools to teach kids about knife safety and the art of making sushi, helping to inspire the next generation. It shows a real commitment to being part of the local fabric, not just a business passing through. This community spirit is what makes their Yorkshire Day celebration feel so genuine. They want to give something back.
