|Anyone getting a bit tired of the same old lunch spots? Well, the new summer food scene in Leeds is about to get a serious shake-up. Trinity Kitchen has rolled out a fresh batch of street food traders, and it’s looking like a trip around the world on a plate.
This season’s food lineup features everything from viral deep-fried lasagne to a social media sensation all the way from Ireland. From Monday, July 28th, a whole new rotation of vendors has parked up in their quirky vans, ready to serve the city.

What’s new at Trinity Kitchen this summer?
Three brand-new names are making their debut, and they’re bringing some properly interesting dishes to the table. It’s a chance for food lovers to try something completely different without having to leave the city centre. The new food lineup is a mix of comforting, surprising, and downright delicious treats that cater to almost any craving.
First up is Masri, who are introducing Leeds to authentic Egyptian street food. Their star dish is Koshary, which might be a new one for many. Think of it as the ultimate comfort food: a warm bowl filled with pasta, fried rice, and lentils, then topped with chickpeas and a tangy, garlicky tomato sauce. It’s one of those meals that just works. Alongside the brilliant Koshary, they’re also serving Ribeye Kebabs and smashed falafel burgers. It’s a fantastic introduction to Egyptian flavours.
Next is an import from Ireland that’s been all over social media: Spice Bags. The vendor, Doles Dirty Bags, has brought this phenomenon to Trinity Leeds. So, what exactly is it? It’s a bag packed with crispy salt-and-pepper chicken and chips, all tossed in a special blend of aromatic spices inspired by Chinese cuisine. It’s savoury, a little bit spicy, and incredibly moreish. They’ve even got a couple of vegan options, so nobody has to miss out. This is set to be a huge hit this summer.
Rounding out the newcomers is I Love Brioche. As the name suggests, they specialise in that lovely, sweet, pillowy bread. Their signature dish? Chicken and waffles. It’s that perfect sweet and savoury combination. But they don’t stop there; they offer all sorts of amazing fillings tucked inside their brioche buns. For anyone who enjoys bold flavours and clever twists on classic dishes, this is one of the new vendors to watch.
Look who’s back at Trinity Leeds
It’s not just about the new faces. Some old favourites are making a welcome return, and people are pretty excited about it. The legendary Stuzzi Leeds is back by popular demand, and they’ve brought their famous ‘Deep Fried Lasagne Van’ with them. Yes, that’s right. They take gooey, cheesy lasagne, coat it in breadcrumbs, and deep-fry it until it’s golden and crispy on the outside and melted on the inside. It went viral for a reason. Visitors can choose from four different flavours, including a classic beef and tomato or a simple mozzarella and basil. It’s pure indulgence.
And for those craving a taste of Asia, Bao Machine is back. These guys are masters of the soft, fluffy steamed buns that have become a street food staple. Their buns are filled with all sorts of deliciousness, from crispy, saucy chicken bites to tofu drenched in a sweet and spicy sauce. The contrast of the soft bun with the flavourful filling is what makes them so good. It’s easy to see why these vendors are fan favourites at Trinity Kitchen.
How long are the new vendors around?
This tasty new lineup isn’t here forever. The new rotation of vendors will be serving their street food from Monday, July 28th, right through until Sunday, 21st September. They operate out of the iconic converted vehicles that make Trinity Kitchen so unique, including a VW Camper Van, a Citroen H van, a horse trailer, and even a shipping container. It’s a fun, vibrant atmosphere that changes every couple of months.
Of course, these pop-ups sit alongside the permanent eateries that are always there. So, even after the summer vendors have moved on, there are still plenty of options. This includes places like Archie’s, Pho, Rola Wala, Tortilla, Pizzaluxe, and the recent arrival, Clapping Seoul, which offers fantastic Korean food.

Why Trinity Leeds is the place to be
Trinity Leeds is more than just a place to eat and shop; it’s a massive part of the city. Operated by Landsec, it’s a space designed to bring people together. With over 120 brands under its huge glass dome, it’s a major retail destination. But it’s also a big part of the local community. It celebrated its 10th anniversary in March 2023, marking a decade of being a central hub for the people of Leeds.
Beyond the food and shops, there’s also the Everyman Cinema, which offers a more luxurious film-watching experience with comfy sofas and a stylish bar. It’s easy to make a whole day of it: a bit of shopping, some incredible street food for dinner, and then a film. Trinity Leeds really does help define the city, creating a lively spot where the community can meet, eat, and have a good time.
