Named after the Spanish word for "shell", cascara is made from the dried outer layer of the coffee cherry—the fruity pulp that surrounds the bean. When brewed, it transforms into a naturally sweet, refreshing drink marked by a juicy texture and bright notes of dried fruit, rosehip, cranberries, and cherries. Ours comes from the sun-drenched Colombian region of Huila, where the "Guacovia" farm managed by Andres Guaca is located. Whether you enjoy it hot or over ice, cascara is a thirst-quenching surprise you didn't know you needed—but will definitely crave again.REGION: Huila, ColombiaFARM: Guacovia, owned by Andres GuacaALTITUDE: 1600–1900 mARABICA VARIETY: BourbonPROCESS: Natural (dry)TASTING NOTES: Dried fruit, Rosehip, Cranberries, CherriesHOW TO PREPARE?For a hot cascara (200 ml):1. Pour 2 tsp. of dried coffee cherries into a cup, then add hot (but not boiling) water.2. Stir, then steep for 10 minutes.3. Strain (or brew in a French press to make it even easier).4. Add honey or citrus fruit if desired.5. Enjoy!For an iced cascara (500 ml):1. Steep 35 g of dried coffee cherries in 450 ml of water, stir, then let steep and cool for ~30 minutes.2. Stir again, then pour into a serving vessel (Chemex or a French press work well).3. Add some sliced fruit, e.g., a few slices of lemon, lime, or orange. Dried fruit works well too.4. Add 50 ml of apple juice.5. Finish with ice cubes, and stir well.6. Enjoy!Ingredients: dried coffee cherries.Storage conditions: store in a cool, dry place.
