Brambleebee Farm raise Old Spot rare breed pigs, who free range their whole lives. Now Bramblebee's on-site butchery has perfected making Home Cured Hot Honey Nitrate Free Back Bacon  How’s it made?  Well.... that’s partly a secret. Bramblebee dry cure all their bacons in house using a special blend of only natural ingredients - curing salts and a little sugar and secrets. The ingredients are rubbed into the bacon. rubbing. re-curing and draining the fluids from the bacon every day. Once the curing time has finished, the bacons are rinsed and hung to dry - it gets better with age. The whole process is slow and takes TIME! Then it’s ready to slice, not thin slices but decent slices, so as you can see a lot of work goes in to the process of curing our Nitrate Free Bacon. Farmer Paul Day likes his cooked in the frying pan where it doesn’t disappear or produce all of that white substance commonly seen with commercial bacon.  All the Nitrate Free Bacon freezes well.
