Family-run winery, located in the Côte Chalonnaise in Burgundy, Henri Champliau owes its name to the grandfather of the founder Alexandre Graffard. Since 2016, the company has been making excellent Cremant de Bourgogne, focusing its production mainly on Pinot Noir with limited yields and manual harvests. The company operates as a 'negociant', working directly with growers without intermediaries to select high-quality grapes for its wines. Cremant de Bourgogne Rose Brut is a blend of Pinot Noir, with additions of Chardonnay and Gamay. The grapes are gently pressed and vinified separately. After the blend, the wine is refermented in the bottle according to the traditional Champenoise method and is then left to rest on its yeasts for 12 months. This process favors the development of a more complex aromatic profile. The wine reveals a beautiful salmon-pink color with fine bubbles. On the nose, it shows aromas of small red fruits, red apples and grapefruit, white flowers, and light hints of brioche. On the palate, it is lively and elegant. Chardonnay and Gamay add freshness and texture respectively. The finish is fresh and accompanied by a creamy mousse. Try it with baked salmon, salmon trout or with fresh cheese.
