Always particularly popular at Christmas, but ideal for round the year cooking, the word 'gammon' can be traced back to the old French word 'jambon' for ham. This particular roasting joint is unsmoked and is sometimes referred to as "Green Gammon", which means the meat is cured in brine but remains uncooked.
