Originally destined to be shared with you last Christmas, the small, fresh port casks I selected for finishing refused to be rushed; the whisky simply wasn’t ready to leave. Patience, and a further four months of maturation, gave it the breathing space to soften and unfold, revealing layers of dark sugar, dried fruit and lingering coffee.
