It seems that spring has officially sprung in Hunmanby, and not just in the fields. The team at Spirit of Yorkshire, the county’s very first single malt whisky distillery, are celebrating the season with a couple of brand new releases. For anyone who enjoys a good Yorkshire whisky, this is exciting news. The distillery has revealed two new bottlings, each with its own unique story and flavour, perfect for the brighter days ahead. As the distillery gets ready to celebrate a decade of distilling in 2026, these spring releases show they're still full of fresh ideas.

Two new spring bottlings from Yorkshire’s finest

So, what exactly has the Spirit of Yorkshire distillery cooked up? They’ve just launched two distinct single malt whisky expressions. One is a special release that gets its flavour from a very local source, and the other introduces a term you might not have heard before: ‘marrying strength’. It sounds a bit like a whisky getting ready for a wedding, and it’s not too far from the truth.

The first of these new drinks is the Filey Bay Porter Cask #2 Special Release. As the name suggests, it’s all about the cask. This whisky spent its time maturing in barrels that once held Marmalade Porter from the Wold Top Brewery. Think about that for a moment. All those rich, dark flavours from the beer soaking into the wood, and then slowly being passed into the whisky. The result is a dram that whisky director Joe Clark describes as ‘complex and fruity with flavours of chocolate cereal, roasted malt and dark marmalade’. It sounds like breakfast and dessert all rolled into one. With only 990 bottles available, this one is a proper limited edition.

The second of the spring releases is the Filey Bay Marrying Strength. This one is described as bold and rich, taking the distillery’s classic flavours of honey, vanilla, citrus, and caramel and turning the volume right up. But what is marrying strength? It's a term that gives a little peek behind the distillery curtain.

So, what is marrying strength anyway?

Ever wondered how whisky gets from a barrel to a bottle at just the right strength? It's not magic, but it is a bit of an art. Most whisky comes straight out of the cask at a very high alcohol level, known as cask strength. This is often a bit too punchy for most people, so distillers add a little water to bring it down to its final bottling strength.

The team at the Spirit of Yorkshire distillery have decided to bottle their whisky at an interesting in-between stage. Joe Clark, the whisky director, explains it perfectly:

“It's a term we use behind the scenes all the time at the distillery, but perhaps not a term most whisky-loving folk would know. Sitting between cask strength (usually 57-60% straight from the cask) and bottling strength (usually 45-48% for us), we have marrying strength.”

Think of it like this: when different whiskies are blended together, they need time to get to know each other and for their flavours to harmonise. This happens at the ‘marrying strength’. It’s a slow, gentle process where the flavours all settle down and combine perfectly before the final drop of water is added. By bottling it at this point, you get a more intense version of the final product. Joe Clark has a great way of putting it:

“Before bottling and final reduction of our classic Flagship to its bottling strength at 46%, it spends long periods of time at what we affectionately refer to as marrying strength, allowing the whisky to harmonise, a gentle and controlled slow reduction as we take it down from cask strength to bottling strength. It results in a bold, dialled-up flavour which I liken to being in the front row of a concert where Filey Bay Flagship is the headline act.”

So, the Filey Bay Marrying Strength is basically a front-row ticket to a flavour concert. You get all the classic Filey Bay notes, just louder and bolder. It’s a chance to taste the single malt whisky in a way the distillers themselves often do.

From a Yorkshire field to your bottle

What makes the Spirit of Yorkshire distillery so special isn’t just its new releases, but how it makes every single drop of its whisky. It’s one of a very small number of distilleries in the world that can truly say it controls everything from the field to the bottle. All the barley used to make the whisky is grown on the family’s own farm, right there in Yorkshire. This isn't just any farming, either; they use regenerative methods, which are great for the environment.

Even the water is local, drawn from deep underground chalk aquifers. This pure, filtered water is a key ingredient in creating the clean, fresh character of their single malt whisky. This commitment to local ingredients and processes is what makes it a 'Single Estate' distillery. And it’s a process that has won them some serious recognition. In 2025, the distillery was named one of the top 50 spirits producers in the world by the IWSC, which is a massive achievement.

The equipment they use is also pretty unique for a distillery in England. They have a special four-plate copper column still that works alongside two massive traditional pot stills. This combination is something you don't really see anywhere else in the country, and it helps them create a spirit that is both rich and incredibly smooth. After a decade of distilling, their process is truly refined. These latest bottlings are a testament to that craft.
